What’s So Special About the Hand-Dived Jumbo Scallop?

If you’ve dined at Henry’s recently, you may have spotted our Hand-Dived Jumbo Orkney Scallop in our small plates - or perhaps you missed it. That’s the thing: once it’s gone, it’s gone! And here’s why this sea treasure has earned its cult status among seafood lovers.

From the Cold Waters of Orkney, Scotland


Our jumbo scallops are hand-dived from the pristine waters surrounding the Orkney Islands off the northern coast of Scotland. This is no mass trawling operation - these beauties are collected by hand, one by one, by an experienced local diver who only harvests what nature allows.


In fact, just up to 80 scallops are caught a day, sometimes less, and we’re lucky to receive only 20 each week at Henry’s. Their rarity alone makes them special - but their flavour and sustainability make them unforgettable.


Kitchen Craft


Once they arrive at Henry’s, our chefs get to work with the utmost respect. Each scallop is shucked by hand, then dry-aged for three days to intensify its natural sweetness and texture. Finally, it's pan-fried to golden perfection, creating a rich, caramelised crust while keeping the centre delicate and tender. Plated up with Chicken Skin Crisp, Chicken Gravy, Apple and Fennel.


It’s an art - and one you can taste in every bite.

Warwick’s Take


Henry’s Head Chef, Warwick, is a big fan (literally) of this scallop. “It’s JUMBO,” he says with a grin, “and it’s entirely sustainable. That’s what makes it a standout for me. There’s nothing like it on the plate.”


Did You Know?


Here’s a fun fact to share at the table: scallops have over 200 eyes and they swim using jet propulsion. That’s right - these little marvels flap their shells to zoom through the water, avoiding predators with impressive speed. Who knew your dinner had such a party trick?
